Healthy Twix Bars (Refined Sugar-Free)

Chewy, chocolatey date caramel bars made with oat and almond flour, peanut butter, protein powder, and a simple homemade chocolate topping. Naturally sweetened and perfect straight from the freezer.

Ingredients
  

Base
  • 1 1/2 cup oat flour (or almond flour)
  • 1/2 cup almond flour
  • 1/2 cup protein powder (1 scoop)
  • 1/2 cup melted coconut oil
  • 1 tsp salt
  • 1 Tbsp maple syrup
Middle
  • 12 mejool dates
  • 1/2 cup organic peanut butter
  • 1 tsp vanilla extract
  • 1 Tbsp maple syrup
  • 1 tsp salt
  • 3 Tbsp milk of choice
Topping
  • 1 Tbsp melted coconut oil
  • 3 Tbsp honey
  • 4 Tbsp cocoa powder
  • flaky salt

Method
 

  1. Add 12 dates to a glass bowl and cover with boiling water. Set aside.
  2. Combine all base ingredients. Flours, protein powder, melted coconut oil, salt and maple syrup. Press into a 8x8 glass pan and put in freezer.
  3. Then make the middle. Grab the soaking dates and pour off the water. Add them to a blender with the peanut butter, vanilla, maple syrup, salt, and milk.
  4. Once blended, pull out the base from the freezer and spread the caramel mixture over it. Put it back in the freezer while prepping the topping.
  5. For the topping melt honey and coconut oil till slightly warm, then add cocoa powder. Mix well, and pour over bars.
  6. Sprinkle coarse salt over the top and put back in the freezer for 2 hours.

Notes

I like to store these in the freezer and eat them from frozen.
