Oat Flour Peach Muffins (Refined Sugar-Free)

These moist peach muffins are made with fresh peaches, honey, yogurt, oat flour and pecans. They are a lightened-up version of the classic peach muffins my family enjoyed growing up.

Ingredients
  

  • 1 cup oat flour
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans (optional)
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 large egg, lightly beaten
  • 1/2 cup plain greek yogurt
  • 1/2 cup honey
  • 1/3 cup butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • 1 cup fresh peeled peaches, cut into small pieces
  • coconut sugar (for topping)

Method
 

  1. Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper liners. Set aside.
  2. In a large bowl, combine oat flour, all-purpose flour, chopped pecans, baking powder, and baking soda.
  3. In a separate bowl, combine egg, greek yogurt, honey, butter, and vanilla extract; mix well.
  4. Stir the wet mixture into the dry ingredients just until moistened, don’t overmix. Then fold in 1 cup diced peaches.
  5. Fill muffin cups two-thirds full, and sprinkle coconut sugar on tops. Bake at 400°F until muffins test done with a toothpick.
  6. Cool in the pan for 10 minutes before removing to a wire rack.

Notes

Recipe Variations

  • You can leave out the pecans for a nut-free muffin or replace them with chopped walnuts.
