This one’s from my mom.
These moist peach muffins are made with fresh peaches, honey, yogurt, oat flour and pecans. They are a lightened-up version of the classic peach muffins my family enjoyed growing up.
This version keeps the flavour and soft texture of the original while using honey instead of processed sugar, and oat flour.
The result is a tender, lightly sweet peach muffin with a subtle nutty flavour and juicy peach pieces in every bite.

Ingredient Notes
FLOUR: Use 1 cup oat flour, and 1/2 cup regular all-purpose flour. Try to avoid whole wheat or doing ALL oat flour. With the oat flour, pecans and peaches already adding weight, whole-wheat flour, or 100% oat flour, will make the muffins too dense.
You can buy oat flour or make your own by blending rolled oats into a fine powder. Measure it after blending.
YOGURT: I use high-protein, plain greek yogurt. You can use vanilla or peach yogurt for extra sweetness, but this will likely add in artificial ingredients and sugars, which we want to avoid whenever possible.
PEACHES: Fresh ripe peaches provide the best flavour. Peel them and cut them into small pieces so they distribute evenly throughout the batter.
When using canned or frozen peaches, drain them thoroughly and blot away excess moisture.

Oat Flour Peach Muffins (Refined Sugar-Free)
Ingredients
- 1 cup oat flour
- 1/2 cup all-purpose flour
- 1 cup chopped pecans (optional)
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 large egg, lightly beaten
- 1/2 cup plain greek yogurt
- 1/2 cup honey
- 1/3 cup butter, melted and slightly cooled
- 1 tsp vanilla extract
- 1 cup fresh peeled peaches, cut into small pieces
- coconut sugar (for topping)
Instructions
- Preheat oven to 400°F. Grease a 12-cup muffin tin or line with paper liners. Set aside.
- In a large bowl, combine oat flour, all-purpose flour, chopped pecans, baking powder, and baking soda.
- In a separate bowl, combine egg, greek yogurt, honey, butter, and vanilla extract; mix well.
- Stir the wet mixture into the dry ingredients just until moistened, don’t overmix. Then fold in 1 cup diced peaches.
- Fill muffin cups two-thirds full, and sprinkle coconut sugar on tops. Bake at 400°F until muffins test done with a toothpick.
- Cool in the pan for 10 minutes before removing to a wire rack.
Notes
Recipe Variations
- You can leave out the pecans for a nut-free muffin or replace them with chopped walnuts.
Tips for Moist Peach Muffins
- Cut the peaches into small pieces so they do not sink or create overly wet pockets in the muffins.
- Measure the flour by spooning it into the measuring cup and levelling the top. Scooping directly from the bag can pack in too much flour and create dry muffins.
- Most importantly, do not overmix the batter. Stir only until the wet and dry ingredients are combined.
- Ovens vary, so begin checking the muffins around 17 minutes. They may need closer to 18 or 19 minutes depending on your muffin pan and the juiciness of the peaches.
How to Store Peach Muffins
- Allow the muffins to cool completely before storing.
- Keep them in an airtight container at room temperature for up to two days. Because they contain fresh fruit and are very moist, refrigerate them for longer storage.
- They should keep in the refrigerator for approximately four to five days.
- You can also freeze the muffins for up to three months. Thaw them at room temperature or warm them briefly before serving.
